Get everything in writing-There are still occasions when business deals can be made with a cup of coffee and a handshake. Unfortunately, caterers frequently find themselves subjected to clients that want to renegotiate their contract onsite, particularly if their turnout is less than expected. You can add contingencies to the contract to deal with unexpected guests or no-shows, but it’s ultimately the client’s responsibility to make accurate attendance estimates.

Do onsite walkthroughs-If you’re working at a new venue, you should schedule a time to see the areas where you will be preparing and serving food. You need to know what resources that you will and won’t have, how many electrical outlets that you will have, and any other logistics that you feel are relevant.

Be a creative problem solver-Any savvy caterer knows to ask in advance if any of the guests have special dietary requirements, but there are no guarantees that the client will remember everything. If you get put on the spot to provide a kosher meal, or you have surprise guests that are vegans, lactose intolerant, or have gluten allergies, your ability to accommodate them won’t go unnoticed.
