The need to reduce overhead and fixed costs is always a top priority for restaurants, and many have discovered the convenience of establishing “ghost kitchens” in place of (or in addition to) their standard brick and mortar operations. These facilities are designed for speed, accuracy, and efficiency, and reduce the cost of doing business by eliminating onsite dining. In many cases, the operations only offer delivery by restaurant employers, or through third party services such as Bite Squad or Uber Eats.

There are several approaches to setting up a ghost kitchen. In some cases, a startup might occupy the kitchen space at a deserted restaurant without opening for dine-in services. In the case of chain restaurants with multiple locations, the ghost kitchen can be dedicated space at an existing location, or a standalone operation that services the whole area. Several communities have created co-op spaces where restaurants can lease space, and share the costs of the space with other restaurants.
