Purchase quality equipment-The old saying that “you get what you pay for” is particularly true in the kitchen. You might get a little sticker shock when you’re outfitting a new kitchen, but it’s worth it. Trying to get by with subpar equipment is often false economy, and you’re much better off investing in equipment that’s built to last.
Keep your equipment clean-You should have a cleaning schedule for every shift, every day, and every week. You also need to have a deep cleaning cycle for all of your equipment. Disassemble everything that you can, and don’t stop cleaning until it looks factory new!
Use all equipment for its intended purpose-Always be sure to use the right tool for the job in the kitchen. A lot of service issues are caused by equipment that’s not used according to the factory recommendations. In addition to leading to the inconvenience of downtime, it can also void your warranty!
