You need to make sure to have a good commercial oven and range, and the proper food storage facilities, and you need to make sure that every meal is the same each time that it’s ordered.
Efficiency-You should make sure that your ticket times are under 15 minutes no matter how full that your dining room might be. You also need to find ways to keep your food costs down and eliminate wasted food. Be sure to also periodically change your menu to eliminate less profitable entrees and drive sales toward your most profitable entrees.
Table touches-There’s an old business philosophy of “management by walking around.” You can’t run a restaurant or bar from your office. That means saying hello to as many guests as you can each night, as well as monitoring the back of the house. Also remember that many unhappy customers don’t complain. They just don’t come back. They do, on the other hand, tell their friends and co-workers about their awful experience and leave bad online reviews.
