Complacency is the silent killer in any operation, and unpopular tasks are unpopular for a reason. That’s why it’s so important to instill a culture of pride in cleanliness. In addition to making sure that the food is safe and the equipment remains operational, it can also have a huge impact on employee morale. No one’s too important to pick up a rag or a mop, and there’s no such thing as “not my job.”

We cannot overstate the importance of making sure that all of your equipment is properly cleaned on a regular schedule. There need to be procedures in place for each shift, business day, week, month, and year. Everyone should hold each other accountable, and be motivated to work together for a clean kitchen. Additionally, one of the most common reasons that we get for a service call is equipment that is not being used properly or for its intended purpose. It’s everyone’s job to keep a clean and well serviced kitchen, and no one is ever off duty!
